The Ultimate Omelet


  • 2-3 large eggs
  • Splash of milk
  • Pinch of salt
  • Freshly ground black pepper
  • Pat of butter
  • Power Greens:
  • Wilted mixed greens
  • Sliced cucumber
  • Crumbled feta

  • Sliced avocado
  • Chopped cilantro
  • Salsa
  • Squeeze of fresh lime juice
  • Earthy Delight:
  • Sauteed mushrooms
  • Goat cheese
  • Minced chives
  • Caprese:
  • Sliced cherry tomatoes
  • Fresh basil
  • Fresh mozzarella
  • Drizzle of balsamic vinegar

Preparation Instructions

  1. Prep the eggs -- Add eggs to a small bowl with a splash of milk, a pinch of salt, and freshly ground pepper to taste. Beat well with a fork, whisk, or egg beater.
  2. Make the omelet -- Melt a pat of butter in a skillet over medium heat and swirl to coat pan. Pour eggs into skillet letting them spread out in pan. When eggs begin to set, push sides of omelet gently, allowing uncooked eggs to flow into skillet. When eggs are almost set but still look moist, add fillings. Carefully fold half the omelet over the fillings. Cook for an additional minute, them slide omelet onto plate. Enjoy!


Omelets are great for cleaning out the fridge. Use whatever you have on hand: asparagus, broccoli, bell pepper, zucchini—it’s all good!

No need to attempt a fancy, chef-style omelet flip, simply slide a spatula under the unfilled side and fold over.
