Roasted Fingerling Potatoes

Ingredients

  • 2 1/2 pounds fingerling or baby potatoes, halved lengthwise
  • 5 fresh thyme stalks
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 ½ tablespoons olive oil
  • 2 tablespoons dry white wine (optional)
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Preparation Instructions

  1. Preheat the oven to 190°C. Lightly grease the 28cm Skillet or 26cm Frypan
  2. In a large bowl, toss the potatoes, thyme, garlic powder, smoked paprika, salt, pepper, white wine and enough olive oil to coat. Arrange in a single layer again and cook for 35 minutes or until the potatoes are browning around the edges. Serve immediately

Tips

You can use any type of potato you want, but fingerling or mixed baby potatoes are tender and tend to cook more evenly. If you are using a different potato, take care to cut them as evenly in size as possible to ensure even cooking.
