Our vegan soup makes a hearty and healthy lunch. Feel free to add diced ham or crumbled bacon if you’re missing the meat, and pair with a thick slice of crusty bread.

Easy Split Pea Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1 carrot, chopped
  • 1 teaspoon curry powder
  • 1 cup split peas
  • 3 cups vegetable stock
  • 1 teaspoon salt

Preparation Instructions

  1. Sauté the vegetables—Heat oil in a large ceramic non-stick saucepan or Dutch oven over medium-low heat. Add onion, celery, and carrot sauté for about 5 minutes.
  2. Make the soup—Add water, peas, and salt. Simmer, stirring occasionally, until peas are soft and soup is very thick—from 50 minutes to 1 1/2 hours.

Tips

Is Soaking Necessary?

For beans, absolutely. But split peas cook quickly, so there’s no need for extra prep work.
