Cinnamon Citrus French Toast

Cinnamon Citrus French Toast

Ingredients

For the toast
  • 1 French baguette, cut into 1-inch slices
  • 3 large eggs
  • 1 cup milk
  • Juice of 2 lemons
  • Juice of 1 orange
  • Juice of 1 blood orange
  • Pinch of salt
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • Butter, for frying
For garnish
  • Sliced citrus fruit
  • Citrus zest
  • Maple syrup

Preparation Instructions

  1. Mix the batterIn a large bowl, whisk together eggs, milk, citrus juice, cinnamon, and pinch of salt. In a small bowl, stir together granulated sugar and cinnamon.
  2. Prepare the panAdd about 1 tablespoon butter to ceramic non-stick skillet over medium high heat. When butter has melted, swirl pan to spread evenly, then sprinkle ceramic non-stick skillet evenly with some of the cinnamon sugar.
  3. Make the French toastDip each slice of bread in egg mixture, making sure both sides are soaked. Place bread slices in pan, sprinkle cinnamon sugar on top, and cook for 2 to 3 minutes per side until golden brown and crispy.
  4. Garnish and serveServe on individual plates with citrus slices, a sprinkling of zest, and a side of warm maple syrup for drizzling.
